Our weekend dinner party at Struan Farm gave me the chance to use the two new ceramic cake stands I bought on my recent trip to Nelson at Mapua's Cool Store Gallery.
One I used for a fabulous gluten free orange cake, made by simmering two oranges in water for an hour, then blending the quartered fruit with ground almonds, sugar, eggs and baking powder in the food processor before baking. Cake is then topped with baked candied oranges and a sugar syrup. It was easy, moist and delicious served with either whipped cream or yogurt.
And then of course everyone needs a bit of chocolate with their coffee and tea, don't they? These are handcrafted NZ chocolates from Bennetts of Mangawhai, not the sort anyone can resist:
