John was up in remote Kellys Bay in Northland recently for a community meeting, and was lucky enough to be given a beautiful freshly smoked fish. Caught in the bay and smoked with manuka (tea tree).
<Of course> I forgot to photograph the fish, which came home wrapped in newspaper, but I think I did it justice.
Okay, not maybe with the photograph given the low light in the kitchen at Struan Farm! But this recipe from New Zealand Woman's Weekly magazine made with spinach and bechamel sauce with a poached egg on top was amazing, thanks to my friend Glen Davenport.
