I baked Nigel Slater's Lemon and Thyme Cake for the first time this past weekend at Struan Farm. It is seriously good--easy to make, very moist. Serve with either yogurt or softly whipped cream.
With both lemon zest and freshly squeezed lemon juice it's a great way to use those surplus lemons off the backyard tree.
