I've been making our own "Struan Farm" muesli (for those in North America, this is granola) for several months now, to rave reviews. Think I've managed to perfect the recipe, so will share it with you:
Struan Farm Muesli
4 cups wholegrain oats (not instant cereal, please, get the real thing)
2 cups (or so) shredded coconut (I use half a NZ bag)
3 cups chopped nuts (I use a mixture of sliced almonds, walnuts, pecans, hazelnuts and cashews, and like this combination best, but you can use whatever nuts you like and have on hand, including pumpkin and/or sunflower seeds)
1/2 cup canola oil (liquid measure)
1/2 cup maple syrup (liquid measure)
1/2 cup brown sugar (dry measure)
1 teaspoon vanilla
pinch of salt if you like
In a large bowl combine oatmeal, coconut and nuts. Put the oil, maple syrup and brown sugar in a saucepan (plus salt if you're using). Heat over medium heat until sugar is melted, I usually let it bubble just a wee bit but not too much. Remove from heat and add vanilla. Pour over oats and nut mixture, stirring to coat. (I often use my hands.)
Put on a large, rimmed oven tray lined with baking paper (or divide into two trays). Bake for 20-30 minutes in a 180 degree C (350 degrees F) pre-heated oven, stirring often, until nicely golden brown. I watch it closely and stir it often with a metal spatula. Like anything, once you've made it in your own oven you'll figure out what works best for you.
Cool and store in an airtight container. Note: you can add dried fruit, i.e., raisins, dried cranberries, cherries, blueberries, banana chips, or apricots after the muesli is out of the oven, however we prefer it as above.
