Saw a recipe for "Persian Love Cake" in last week's "Bite" magazine in the NZ Herald. It had been submitted by reader Emma Oakman as part of a recipe contest, and was one of two runners up.
The combination of spices (cinnamon, nutmeg, and cardamon) and pistachios, along with almond meal, yogurt, brown and demerara sugars all spoke to me. It's gluten free if that's important to you and very quick and easy to make, baking only for 30 minutes.
Served with plain greek yogurt, this is absolutely delicious. Really recommend you try this recipe!
