We were gifted a Christmas cake a few weekends ago by visiting friends, so for our weekend dessert I decided to use it to try making "whipped mascarpone custard and almond christmas pudding trifle" from the "magical Christmas issue" of Donna Hay magazine. What was interesting about the recipe was that no baking or real effort was required! Store bought custard was whipped with store bought mascarpone and a bit of orange zest. This was then spooned into glasses and layered with some of the fruit cake that had been soaked in Pedro Ximenez (sweet) sherry, and topped with toasted almonds and more of the orange zest.
Very simple and very good! A cheater's dessert it was so easy....
