It was a productive day here at Struan Farm, rainy though it was. I was able to cook up the relishes for our annual Boxing Day celebration, both from Donna Hay magazine's Christmas issue: "cranberry ginger pan relish" and "beetroot, balsamic & red currant relish."
The cranberry relish is meant to accompany roast turkey and the beetroot, etc. ham. Think the cranberry would also go well with venison, not that that's on the menu. Both keep for up to two weeks in the fridge, so are perfect to make well ahead of the big event. 26 people and counting.....
