Pancakes came next here at Struan Farm in terms of our dairy free experiments. John has been making his "world famous in Piopio" pancakes for breakfast when our grandchildren visit for several years now. While he's perfected his recipe we're needing to change that since it includes milk. Last time everyone visited we had my porridge a la Nelson with almond milk along with scrambled eggs, since we hadn't had time to work through dairy free pancake recipes. Now we're onto them.
I did some research and found two initial candidates for our pancake experiment: New World's So Good pancakes, which are made with unsweetened almond milk, and Simply Whisked's "Extra Fluffy Dairy Free Pancakes," which are made with refrigerated (not tinned) coconut milk.
The almond milk version wasn't great. The pancakes looked mottled, more like pikelets or crumpets, and the taste wasn't much better. Cardboard and chewy, really.
The coconut milk recipe on the other hand was excellent. There was a slight taste of coconut you don't have with regular pancakes, but that's okay.
So yes, we have a winner!
