The family had a birthday celebration for John's brother Carrick over the weekend. It was one of those milestones that needs to be acknowledged and feted, although I won't say which one. We met at his house in Lake Rotoiti for lunch. Everyone was given an assignment. I was granted my request to make the cake by the official event organiser, and directed to make a carrot cake. You know me, I almost detoured off the designated highway and made Ottolenghi's Olive Oil and Apple Cake. But in the end I didn't. I just made Ottolenghi's maple syrup cream cheese icing for the carrot cake instead since it's less sweet. I also went "naked" to try to stay a bit lower fat, and decorated the top with dried apricots, cranberries and finely chopped walnut.
Next in the cake queue comes granddaughter Ella's tenth birthday celebration.
