I got around to making the Alphabet Vegetable Soup. You knew I would.
We had a rainy day here at Struan Farm a few days ago, it was damp and chilly and good soup weather. I learned two things: the recipe does entail a wee bit of dicing of onion, potato, carrots, celery. I saved time by using frozen corn, peas and beans. I also used some of my roasted tomatoes from the freezer rather than the "stewed" tomatoes called for. The other thing I learned was that the alphabet pasta does swell, and the letters enlarge, as the soup cooks. When you pour the pasta in it doesn't look like there are enough letters floating around the soup. Trust me, there are!
It's the sort of recipe you can season or not however you like. I halved the recipe, which still made a big pot, enough for four adults easily. For a more complete meal, try serving the soup with Lazy Ladies Loaf, an easy ciabatta type bread. The dough is mixed and put into the fridge the night before to proof, then hand shaped on an oven tray and baked. Seriously easy and seriously good!
