Yes it's lemon time here at Struan Farm. Also lemon thyme. Cake, that is. The lemons are ripening fast and furious, so I'm making use of them as well as giving heaps to Piopio's Community Fruit & Veg Stand.
I decided to make Nigel Slater's delicious "Lemon and Thyme Cake." The cake is drizzled with lemon thyme syrup straight out of the oven, which makes it wonderfully moist. I've made this before and I'll make it again. I've also used lemon thyme to make the Lemon and Thyme Cake, since it's my favourite variety of thyme to grow in the gardens.
Nigel recommends serving thick slices with yogurt, which works for me. John would prefer cream, you know how that goes.
