For the past week I've been busy bottling figs here at Struan Farm. As soon as I've picked one kg. I've whipped out a jar, saucepan, red wine, balsamic, sugar, spices and brandy to make Rowan Bishop's "figs to die for." Fresh figs will keep at most in the fridge for a day or so, they're quite fragile. It's a use them or lose them proposition. I've made this recipe before, it's easy and the fruit is quite good warm on ice cream. She recommends eating them with blue cheese and crackers as well.
Ten one litre jars in total this season, just with two small "Huia" fig trees. I've wrapped one up in a tea towel to take to a friend in Nelson as a hostess gift. Still a few more figs on the tree. I'm thinking paste or jam for those. John is thinking there's a dehydrator in my future as these trees grow!
