Over the past few years I've found myself increasingly enchanted with flowering herbs here at Struan Farm. Dill, coriander, even parsley flowers are quite delicate and pretty. I used to go around cutting them off to avoid having the herbs go to seed, but now I let them go for it and enjoy the flowers.
At the moment it's coriander on show. Of course the flowers are edible, and they lend a delicate touch to a salad or dish. But I also put them in vases to enjoy purely as flowers.
I was interested to read that coriander symbolises "hidden worth." Perhaps because it re-seeds and creates another crop.
We've got heaps of hidden worth happening in the gardens right now.
