John has been harvesting proper paddock mushrooms in the mornings here at Struan Farm when conditions have them popping up. He now knows the spots to check around the property. Once they're cleaned I pop them into the food dehydrator so they can be dried and stored for later use. We've already had one dinner of mushroom risotto using them (re-hydrated) that was delicious.
So we keep our eyes out for fungi and mushrooms around the farm. I was happy to see the regular seasonal colony of Shaggy Inkcaps (Coprinus comatus) at the bottom of our drive yesterday. These black spored mushrooms are edible (provided that's done without drinking any alcohol), but I'm not going to test that. As they age they "auto digest," dripping a black liquid.
And yes, they have a distinctive shape. We won't go there, will we?!
